I feel like a true Arizonian now. I made something with prickly pear fruit or tunas as they are called. As long as I can remember, I've wanted to make something with prickly pear. Even though I am a native to Arizona this would be proof. I made prickly pear sorbet from this recipe after I found some of the tunas in the store.
Good thing the spines were already off. This is what the tunas look like. Slice them open.
The juice is so red and stains your fingers purple. Scoop out the fruit, mix with lime juice and simple syrup in the blender. Strain out the millions of seeds. Pour into the tuna shells (if you want to be fancy smancy) and freeze for many hours, so it was just overnight, but I was impatiently awaiting my sorbet.
It was pretty yummy. The fruit itself had a cactus-y pomogranate taste. I liked the lime flavor in the sorbet. I'd say this sorbet is perfect for a hot summer day treat. It also perfectly crossed off #101 from my 101 goals in 1,001 days list.
